Alan and I had a great day on Saturday for my birthday. We hung out downtown and explored new areas that we haven’t been to yet. The air was so cold and foggy, so foggy that we couldn’t see that far ahead of us. It was beautiful though. There was still a little snow on the ground and I think that’s the first time I’ve ever been near snow on my birthday. I love snow… I love this city.
After we spent time downtown, we went to Meridian to see a light show. There was a house with lights lighting up to the music on a radio station. I’ve seen light shows like that on Youtube, but never in person. It was so awesome!
Quick, Easy, Low-Fat Vegan Chili
To make it healthier, you can add lentils instead of the soy crumbles.
Potatoes (2, cubed)
Kidney Beans (1 can – 16 oz)
Soy Crumbles like Boca (1/2 bag) OR Lentils (1 cup)
Tomato Paste – 1 can
Tomato chucks – 1/2 can (or add some fresh tomatoes)
Bell Pepper (1/2 of one)
Onion (1/3 of one)
Garlic (2 or 3 cloves)
Mixed Frozen Veggies (1/2 bag)
Frozen Broccoli (1/2 bag)
Spiced with cumin, chili powder, garlic powder, onion flakes, nutritional yeast, salt and pepper
Boil potato cubes in 3 1/2 cups water until soft, but not mushy
Keep water in pot.
Finely chop or put onion/bell pepper in food processor.
You can add them in when the potatoes are almost done.
Add in everything else and cook on medium heat for about 12 minutes or until the soy crumbles are cooked.
We’ve lived in Boise Idaho for a few months now and we absolutely love it here! It’s so beautiful, safe and has nice weather. It is a little colder than we are used to, but not much and I like it colder. The summers don’t reach 100 degrees very often either which is a great!
Alan and I knew that we wanted to leave Nevada shortly after arriving. We made it a goal to get out within a year and we did just that! We moved to Nevada in August of 2015 and moved to Boise in July 2016. We’ve been accomplishing the goals that we set our mind to.
We wanted to move to Massachusetts in 2015 and we set out on a cross country road trip all the way to Massachusetts. It ended up not working out in the end, but at least we did it! That was the first time that I’ve ever been across the country!
Yesterday we went to our favorite spot out here. It’s called Hull’s Gulch and it overlooks the entire city. It’s such a beautiful view during the day and night! During the day we are able to see all of the colors, buildings and cars moving through the city whereas at night we can see millions of twinkling lights all around us. It’s a magical view and I feel so grateful to be living here.
My vision for this blog is to provide the inspiration, knowledge and motivation it takes for someone to follow their dreams. I’ll be sharing my journey towards entrepreneurship while sharing some of my other interests including veganism, healthy plant-based lifestyle, frugal and minimal living, my love of nature and my little family.
I believe that every human on this planet has enormous potential, but sometimes we lose our direction and are more than likely told by others to “get real”. “Only in my dreams!” How many times have you heard someone say that one? When they say that, they are absolutely correct. Their happiness is in their dreams, so why aren’t they following them?
In this blog I am going to be relaying a lot of what I learn while writing my own ideas and goals. I have a passion for breaking out of mediocre living and I invite you to come along with me! 😀

That is the secret to success. Write them down, think about them everyday and you will naturally move toward them. Set your ship with a destination because without one, it may end up on a deserted island.
