Quick, Easy, Low-Fat Vegan Chili

To make it healthier, you can add lentils instead of the soy crumbles.

Potatoes (2, cubed)
Kidney Beans (1 can – 16 oz)
Soy Crumbles like Boca (1/2 bag) OR Lentils (1 cup)
Tomato Paste – 1 can
Tomato chucks – 1/2 can (or add some fresh tomatoes)
Bell Pepper (1/2 of one)
Onion (1/3 of one)
Garlic (2 or 3 cloves)
Mixed Frozen Veggies (1/2 bag)
Frozen Broccoli (1/2 bag)

Spiced with cumin, chili powder, garlic powder, onion flakes, nutritional yeast, salt and pepper

Boil potato cubes in 3 1/2 cups water until soft, but not mushy
Keep water in pot.
Finely chop or put onion/bell pepper in food processor.
You can add them in when the potatoes are almost done.
Add in everything else and cook on medium heat for about 12 minutes or until the soy crumbles are cooked.
